Kate’s Smoothie Recipe

Try the smoothie recipe Kate Underwood recommends in today’s devo:

1 (6 oz.) carton light yogurt  (I prefer key lime or cherry flavor)
3–4 cups fresh spinach, rinsed
2 Tbsp. ground flaxseed
1–1½ cup juice or water
1 fresh banana
1–1½ cup fresh or frozen mixed berries (blueberries, raspberries, and blackberries)

 

Blend together all ingredients until smoothie is at desired consistency. Makes about 4 cups.

If the smoothie is too thick, add more juice or water. If too thin, add more berries. If the amount of spinach makes you nervous, just try a handful or two at first. I promise, if you blend your smoothie well and use tasty berries and yogurt, you won’t even notice the spinach!


NOTE:
This is a basic starter recipe. Feel free to adjust quantities and flavors to suit your tastes! I love to use blueberry-pomegranate juice; but orange, apple, and other flavors work well. Yogurt flavors can make a big difference in taste, so try whatever you like and see how it works for you!


VARIATIONS:

  • For added nutritional punch, try some fresh kale leaves in place of some of the spinach. Kale has a stronger taste, so use smaller quantities at first.
  • Fresh or frozen mango chunks give a delicious tropical taste to your smoothie.
  • Blend a Granny Smith apple into your smoothie.
